A fruit with a thousand-year history, now a premium product exported worldwide, the Noto Almond is a Slow Food Presidium of biodiversity. With unparalleled sensory qualities, making it the queen of Sicilian pastry, almonds are also a valuable source of nutrition, rich in fiber, calcium, potassium, and magnesium. We grow five cultivars: Tuono, Pizzuta, Fascionello, Romana, and Chirricupara. With the exception of Tuono (a commercial variety with high yields), each of the cultivated varieties represents an invaluable treasure of biodiversity known and appreciated worldwide. Our almonds are produced scrupulously following organic farming methods, respecting the environment and protecting human health.

Our honey represents the fingerprint of our region. Produced by Sicilian black bees (Apis mellifera sicula), Santa Chiara contains three to ten times more antioxidants than any other honey, as well as thirteen antibacterial and four antifungal substances, the latter never found in other honeys. A delicious, natural, and healing product.

Verde Ibleo

Verde Ibleo is an organic extra virgin olive oil with the protected designation of origin "Monti Iblei DOP." This unique oil is made from a blend of olives grown on the sunny hills of Noto, the blend of varieties used for our olive oil is a range of: Moresca (60%), Verdesa (20%), and Tonda Iblea (20%). The olives, harvested daily, are taken to the mill for cold pressing, enhancing the organoleptic properties of our oils and serving the aromas and rich fragrance of our land. Verde Ibleo has an intense fruity aroma with a mild herbaceous note, and a bold flavor with a light spicy note.

Ragusano's Donkey

Donkeys were once an important presence in the countryside: until 30 or 40 years ago, in southern Italy, it was common to find donkeys carrying loads, turning millstones, or pulling plows. Today, the Ragusana breed (like many other breeds found in Sicily) is in danger of extinction. The company's decision to raise this breed stems from the desire to preserve an important part of the island's biodiversity. Our farm's livestock farming is currently focused on increasing the number of animals in the stables. In the near future, we aim to enhance their best feature: milk production. While their use in the fields is no longer profitable, their milk, thanks to its nutritional properties that make it similar to human milk, represents an important economic alternative to raising them. The company currently has a herd of seven donkeys, raised organically. The Ragusana donkey is a Slow Food Presidium breed.
